No Signboard Seafood

No Signboard grew from a humble Geylang stall — once literally without a signboard — into a full-fledged seafood institution, a classic Singapore rags-to-riches food story. It's the restaurant widely credited with creating white pepper crab, a milder, more aromatic cousin of the famous black pepper version. The crab is wok-fried with white pepper, butter and curry leaves until intensely fragrant, and you can have it half-and-half if you can't choose. Round out the table with cereal prawns, creamy bee hoon in seafood broth and steamed garoupa. The original Geylang restaurant, in the heart of the city's old supper belt, is the one to seek out.
