Lao Ban Soya Beancurd
Lao Ban is the stall widely credited with kicking off Singapore's silky soya beancurd craze, its tau huay so smooth it jiggles like a set custard. Served cold in a tub, it's lightly sweet, beany and impossibly soft, with a soya-milk version alongside. The Old Airport Road outlet is the original draw, and bowls often sell out. It's a simple, refreshing dessert — grab one to eat on the spot while you browse the hawker centre.
