This Adam Road Food Centre stall is the only mee rebus in Singapore with a Michelin Bib Gourmand, run by the second generation and known to sell out by late morning. The gravy is fragrant and intricately balanced — thick, savoury-sweet and richly spiced over springy yellow noodles. It's topped the classic way with egg, green chilli and lime. Go early, as the queue is long and the best of it is gone by 10.30am.
