Hawker Chan Soya Sauce Chicken
Hawker Chan is the Chinatown Complex stall that made history in 2016 as one of the first two hawker stalls in the world to earn a Michelin star — for a plate of soya sauce chicken that then cost just a few dollars. Chef Chan Hon Meng poaches his chicken in a Shaoxing-wine-scented soy master stock until the skin turns glossy and the meat stays tender, served over rice or springy noodles. The stall lost its star in 2021 but remains a pilgrimage stop, and the queue still forms early. Add char siew or roast pork and a side of greens to round out the plate. It's a bustling, cash-based second-floor stall in an old-school hawker centre — go off-peak and bring small notes.
