Jumbo is the name most visitors associate with Singapore's signature chilli crab, and for many it's the first stop on a food trip. Meaty mud crab is stir-fried in a thick, sweet-spicy tomato-and-egg gravy that begs to be mopped up with fried or steamed mantou buns. Founded in 1987, it grew from East Coast into a polished chain, with riverside branches at Riverside Point and the Esplanade offering skyline views to match the feast. Beyond the crab, order cereal prawns, salted-egg-yolk dishes and stir-fried kailan to round out the table. Book ahead — especially weekends and dinner — and note crab is sold by weight at seasonal market prices.
