A Hong Lim Complex institution that has fried char kway teow for decades and is prized for serious wok hei — the smoky char only a screaming-hot wok delivers. Flat rice noodles are tossed over high heat with egg, blood cockles, Chinese sausage, fishcake, bean sprouts and chives in a dark, sweet-savoury sauce. The uncle keeps it old-school, cooking small batches without rushing, so the queue moves slowly and it's cash only. This version leans a touch sweeter and is fried slightly moist — that's the house style, not a flaw. Get there before the lunch rush, as he often sells out and closes early.
